Soapworts (Gypsophila)
Saponaria is a genus of flowering plants in the pink family, Caryophyllaceae.The common name of the Saponaria is soapwort.They are herbaceous perennials and annuals, some with woody bases. It is known that 50 species of soapworth is found in Turkey.
It is used in halva and ice cream production due to its bleaching properties in food industry. In Turkish cuisine, it is used in tahini halvah, nougat,pasha delight. It is also widely used in soap and detergent industry due to its foaming properties. Another area of use is the cleaning of garments made of silk and precious fabrics in warm water from the boiling of the roots. As a drug, it is in the composition of some drugs due to its phlegm and diuretic properties.
