It also contains a carotenoid pigment, crocin, which imparts a rich golden-yellow hue to dishes and textiles.It has been found by modern medicine that saffron, which has a very old history as the traditional treatment method, has anticarcinogenic (anti-cancer), antimutagenic (mutation inhibitory), immunomodulating and antioxidant-like properties.
